Children's Library

We love to do fun things on the weekends, but the cold weather makes that a challenge. Lately we have really enjoyed going to the Clarksville-Montgomery County Public Library. They have a Children's Library that is great! Marlie is able to play with lots of puzzles, soft toys, books and more, and we are able to just relax with a book or magazine of our own (when we're not playing with her!).
On our most recent trip Kaylee joined us and the girls had so much fun.

Pork Chops with Apples and Stuffing

This is a new, EASY favorite of ours. I like it with even more apples than it calls for.

Pork Chops with Apples and Stuffing
Prep time 10 min
Total time 50 min
Makes 6 servings

1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
1 can (21 oz.) apple pie filling
6 boneless pork loin chops (1-1/2 lb.), 3/4 inch thick

HEAT oven to 375ºF.

PREPARE stuffing as directed on package.

SPREAD pie filling onto bottom of 13x9-inch baking dish sprayed with cooking spray; top with chops and stuffing. Cover with foil.

BAKE 40 min. or until chops are done (160ºF), removing foil after 30 min.

First Snow of the Year

We've received a little bit of snow today, and that reminded me I never posted pictures from our first snow of the year. I, personally, would be happy to go a whole winter without snow. Marlie, on the other hand, had a great time playing in the snow with her friends. These pictures were from 7 & 8 January.

Chicken Enchiladas

I don't know how to make real Mexican food, but we love these cheesy chicken enchiladas.

Chicken Enchiladas

2 cups chopped cooked chicken or turkey
1 cup chopped green bell pepper
1 package (8 oz) cream cheese, cubed
1 jar (8 oz) salsa, divided
8 (6-inch) flour tortillas
3/4 pound (12 ounces) Velveeta cheese spread, cut up
1/4 cup milk

Stir chicken, bell pepper, cream cheese and 1/2 cup salsa in saucepan on low heat until cream cheese is melted.

Stir process cheese spread & milk in saucepan on low heat until smooth.

Spoon 1/3 cup chicken mixture down center of each tortilla; roll up. Place, seam-side down, in lightly greased 12x8-inch baking dish.

Pour cheese sauce mixture over tortillas; cover with foil.

Bake at 350 degrees for 20 minutes or until thoroughly heated. Pour remaining salsa over tortillas.

Christmas was a little less chaotic this year than it has been in the past few. We were very thankful for that!
I was just trying to enjoy the festivities this year so I didn't take many pictures. I'm borrowing some of my mom's to share our day.
We went to the usual Christmas Eve get together with Bryan's dad's side of the family. That was the first time Marlie got to open Christmas presents so we all enjoyed that. A few days after Christmas we had lunch with Bryan's mom's side of the family. It was a nice relaxing end to our Christmas celebration.
On Christmas morning Marlie woke up to find what Santa had brought to my parents' house. Santa brought M mostly useful gifts this year. We figured we would take advantage of the fact that she still doesn't know to ask for anything and everything - while we can. The only thing she asked for was a bike helmet so Santa was sure to get that. Hopefully at a later date I'll share what each of us got for Christmas and maybe some reviews on those gifts.

My Birthday

In the middle of all the Christmas craziness, I celebrated my 29th birthday. We actually began the day by allowing Marlie to have some fun of her own. Our neighbor friends came over and the girls made their own edible snowmen using the leftovers from the unit Christmas party.

I had hoped to go to a place that I had heard a lot about for my birthday dinner -Patti's Settlement
. Since my birthday was on a Monday I wasn't too worried about fighting a crowd. Well I was wrong! When I called on Monday morning the only reservation they still had left was at 8:30 that night! Since Patti's is about an hour away, that was too late for us. Hopefully we'll have a chance to go there eventually. I ended up settling for Red Lobster. It's not my favorite restaurant in the area but it worked well for us that night.
I managed to get a quick picture with M before we left the house.

I LOVE ice cream cakes so Bryan got me one from Baskin Robbins. Marlie was more than happy to help me eat it! My family was also sweet enough to get me some nice gifts. My parents gave me an Amazon gift card - which I hope to use to buy a hydration belt for running. Bryan & Marlie gave me a few undergarments and a GPS watch. I actually needed and really wanted both of these things!

Pre-Christmas Recap

Here are some of the things we did leading up to Christmas.
As I mentioned in a previous post, I hosted a cookie exchange and potluck for the families of the battery while the guys were in the field. The following week we took part in the battalion Christmas party. We were tasked with coming up for an activity for the children. A few wives in the battery suggested that we do edible snowmen. It went over pretty well and I ended up manning the table for most of the night. I managed to sneak away when it was time for Marlie to see Santa. She was SO excited the whole time she & Bryan were waiting in line. Even when there was just one person in front of her she was jumping out of line to run up to Santa. However, when it was actually her turn to sit with Santa she quickly lost enthusiasm. The closest she would get was with Bryan holding her.

We had been looking forward to visiting Christmas on the Cumberland and finally got around to it the Sunday before Christmas. The Riverwalk in downtown Clarksville had a light display in the theme "The 12 Days of Christmas".

Back in Training

I recently registered for the Country Music Half Marathon which will be held in Nashville in April. I have had a long break from working out so I was excited to get back in the gym today. I have wanted to try the P90X or CrossFit exercise programs for quite a while but haven't been able to do them while training for a run. I decided to do my own version of CrossFit and integrate it into my training. Today was my first attempt and I really enjoyed the workout!

Here's how my gym time went:
5 minute warm up on the elliptical
30 minute run on the treadmill
5 minute cool down on the treadmill
Next I moved into the weight room for 3 Rounds of:
20 Pull Ups
20 Dips
15 Sit Ups
15 Hip Extensions
Of course I ended with some serious stretching!

Since I've been posting so many recipes lately, I decided that I should try to post my workouts too. That way it will look like I do something other than eat all the time!
